From plumber to patissiere, there’s no regrets for Troy

A plumbing apprenticeship is an unlikely beginning for a multi award winning patissiere, but that is the unique pathway that Troy Hindmarch has followed and there’s been no looking back. 

“I was always going to take after my parents and siblings and do an apprenticeship,” said Troy.  “I started a plumbing apprenticeship as I thought that was a natural fit for me but after six months with the business it closed due to financial difficulties.  After that, I had to cast about for an alternative. Having investigated lots of courses I really liked the idea of being a pastry chef. I love it now and after my initial setback am very happy with the way things have turned out.”

So Troy should be, as a multiple championship winner at Sydney’s Royal Easter Show and winner of the 2016 WorldSkills Australia National Pastry Chef competition. A glance at the customer reviews for his employer, Gumnut Patisserie in Bowral, New South Wales shows consistent five-star customer reviews with many customers coming from far and wide to purchase the ‘best pies and slices in Australia’. Perhaps that could eventually be in the world, as Troy has his sights set on competing in the Savour Patissiere of the Year competition in 2017 which is open to the top 20 pastry chefs world-wide.

With such success at a very young age it isn’t surprising that Troy has nothing but positive things to say about his decision to be an apprentice. “You can travel to lots of places, meet lots of people and get paid while training.  For a young person an apprenticeship can open many doors. It has certainly given me a head start in life—I  was 19 when I built my first house! In the near future I intend to open my own patisserie and that will set me up for life.

“For anyone thinking about a future career I would say to grab the opportunity to do an apprenticeship with open arms. You don’t need any particular skills to start—you’ll learn everything you need to know on the job or at school. With enthusiasm and a willingness to learn you’ll have your certificate in no time. From there you’ll have every opportunity to carve out an excellent living and make great friends and memories along the way.”
